Mabon BAKED-APPLE Oatmeal with Walnuts!

Happy Mabon / "Autumn Equinox"! This recipe has become my annual Mabon Sabbat, aka "Pagan Thanksgiving", go-to dish! Apple-picking is a time-honored tradition and prominent activity for those who celebrate Mabon/Autumn Equinox. Mabon is the second harvest of the Year's Wheel, and marks a window of time where the sun shines equally on both the north and south hemispheres i.e. the length of day and night time are the same! After this Autumn Sabbat passes, the nights will begin to grow longer in length. So Mabon is the last-BIG-hoorah to harvest and cultivate not only your crops, but your ideas and passions, give thanks to your ancestors and others, and celebrate the gratitude you feel for your bountiful life! OR -You can just make this amazing recipe to share with the whole family! Pick your own apples if possible, but don't worry-I didn't pick my own this year either (wink)!


INGREDIENTS:

 
  • Gala Apples, de-cored (1 Gala Apple serves about 1.5 people)

  • Powdered Cinnamon (desired amount)

  • Ghee Cooking Spray

  • Ghee Spread

  • Organic Rolled Oats (desired amount)

  • Unsweetened Vanilla Almond Milk (I used unsweetened to reduce sugar intake, but it's your choice) 1 "splash" per bowl

  • Walnut halves & bits

  • 1 Drop of OnGuard (Protective Essential Oil blend, and is optional) OnGuard contains oils that help your body's immune system function more efficiently, and contains: Wild Orange Peel, Cinnamon Leaf, Cinnamon Bark, Eucalyptus Leaf, Rosemary Leaf, and Clove Bud oils. Purchase OnGuard here The perfect oil for the start of Autumn!

  • Boiled water (desired amount)

PREPARATION:

 
  1. Preheat your oven to 300 degrees

  2. Spray a coat of Ghee to a shallow cookie pan

  3. Cut up Gala Apples into 1/4-1/2" pieces

  4. Lay all apple cubes with their widest side face down on the cookie pan and spray the tops of the apple cubes with ghee. Make sure all your cubes are face down on the pan and not stacked on top of each other

  5. Sprinkle Cinnamon across all the apple pieces

  6. Boil a large tea kettle or pot of water

  7. When your oven has preheated, put cookie pan on the middle rack of the oven and bake for 10 minutes

  8. In individual serving bowls add the desired amount of oats, keeping in mind the serving size will greatly increase once boiling water and the apple cubes are added

  9. Splash a small amount of Almond Milk in each bowl with oats

  10. Add 2/3rds-teaspoon of ghee to each serving bowl

  11. Optional: Add 1 drop of OnGuard and/or add more powdered cinnamon to bowls

  12. When the oven timer is complete, use a spatula to slide the apple pieces, ghee, and cinnamon from the pan into the bowls

  13. Add desired amount of walnut bits to your oatmeal

  14. Add your desired amount of boiled hot water to your oats and stir

  15. Let cool for 1-2 minutes before consuming

  16. ENJOY THE "ACORNS"-OUT-OF-IT!
